Cheesecake

The crust

2 cups graham cracker crumbs
1 stick (1/2 cup) of butter

Preheat your oven to 350.

Mix crumbs and butter. Press onto sides and bottom of a 10" spring form pan.

Filling #1

3 packages of cream cheese
4 eggs
1 cup sugar
2 teaspoons vanilla

In a stand mixer, use the wire whip to beat the snot out of the cheese until fluffy. (10-12 minutes). Beat in the eggs one by one for 3-5 minutes each. Add sugar and vanilla for a total beating time of 30 minutes.

Pour the filling into the crust, and bake at 350 for 35 minutes. Remove from oven and let stand for 5 minutes.

Set the oven to 475.

Filling #2

1 pint sour cream
3-4 tablespoons of sugar
2 teaspoons of vanilla

Mix sour cream, sugar and vanilla until blended. Pour over cake. Return to oven and bake at 475 for 5 minutes. Chill in refrigerator over night.
